OJIKA PEANUT CURRY

How to make Peanut Chicken Curry (Curry 4 plates)

【Ingredients】

1 peanut curry book

1 onion/200~300g, minced

1 tomato / 200~300g, diced

Chicken meat / 500g, bite-sized

1 tablespoon grated garlic

1 tablespoon grated ginger

Hot water or water / 500ml

1 tablespoon lemon juice

1&1/2 teaspoons salt

3 tablespoons oil

 

【Steps】

1. Put oil and spice mix A in a frying pan and fry over low to medium heat to transfer the aroma of the spices to the oil. Transfer the aroma of the spices to the oil. (Be careful not to burn!)

2. Put chopped onions in the pan and saute over high heat.

3. When the onions are golden brown, add grated garlic and ginger.

4. Add diced tomatoes and saute until they are rehydrated and form a paste.

★POINT: The paste will bring out the flavor and richness of the dish.

5. Once the water has evaporated, add spice mix B and salt.

6. Add chicken cut into bite-sized pieces, and when cooked through, add water.

7. When it comes to a simmer, add lemon juice, garam masala and peanut paste.

☆If you do not like spicy curry, you can enjoy it by replacing the amount of water with coconut milk instead of adding garam masala. Also, sweet vegetables such as sweet potatoes can be used for an even better taste.

How to make Fish Curry ( Curry 4 plates)

【Ingredients】

1 peanut curry book

1 onion (200g~300g), minced

1 tomato (200g~300g), diced

4 pieces of yellowtail (or seasonal fish), bite-sized

1 tablespoon each of grated garlic and ginger

300 ml hot or cold water

200 ml coconut milk

1 tablespoon lemon juice

3 tablespoons oil

1&1/2 teaspoons salt

1 cup pak choi (optional)

【Steps】

1. Put oil and spice mix A in a frying pan and fry over low to medium heat to transfer the aroma of the spices to the oil. Transfer the aroma of the spices to the oil. (Be careful not to burn!)

2. Put chopped onions in the pan and saute over high heat.

3. When the onions are golden brown, add grated garlic and ginger.

4. Add diced tomatoes and saute until they are rehydrated and form a paste.

★POINT: The paste will bring out the flavor and richness of the dish.

5. After the water has evaporated, add the spice mix B and salt.

6. Add the peanut paste and blend, then add the coconut milk and bring to a boil.

7. Add the bite-size pieces of yellowtail and lemon juice. Add chopped pak choi to taste.

 

How to make Peanut Curry Laksa (Curry Udon Noodle)

【Ingredients】

1 peanut curry book

1 onion (200g~300g)

1 tomato (200g~300g)

4 servings of udon noodles

400 ml soup stock

1 tablespoon each of grated garlic and ginger

200 ml coconut milk

1 tablespoon lemon juice

3 tablespoons oil

1 1/2 teaspoons salt

1 cup pak choi (optional)

2 or 3 lime leaves (optional)

【Steps】

1. Put oil and spice mix A in a frying pan and fry over low to medium heat to transfer the aroma of the spices to the oil. Transfer the aroma of the spices to the oil. (Be careful not to burn!)

6. Add peanuts, broth, coconut milk, and lime leaves and bring to a boil.

7. Add lemon juice. Add chopped pak choi to taste.

8. Place the cooked udon noodles in a bowl and add the curry soup.

It was 70 years ago that peanuts were first produced on Ojika Island. At that time, Japan was in the midst of a period of war. During the war, food was hard to come by, and of course, children’s favorite snacks such as candy balls and manju (a sweet made with bean paste) were also hard to come by. Children are the island’s treasure. Seeing that the children had little to look forward to, the adults made peanuts as a substitute for snacks, and this was the beginning of Ojika Island peanuts. The peanuts grown on Ojika Island’s sun-drenched red soil have a rich, full-bodied flavor and a sweetness that fills your mouth when you bite into them.

Where is Ojika Island?

It is a small island on the northern tip of the Goto Archipelago in Nagasaki Prefecture. It is about 60 km west of Sasebo Port in Nagasaki Prefecture.

It takes about 3 hours by ferry from Sasebo, 1.5 hours by high-speed boat, and 5 hours by ferry from Fukuoka.

Kankoro-mochi, a traditional sweet made from sweet potatoes, is now a specialty of the Goto Islands, and is said to have been introduced by Christians who fled the persecution of Christians by the Omura clan during the Edo period and came to the Goto Islands from the Outer Sea region of mainland Nagasaki Prefecture. The food culture has been passed down from generation to generation along their footsteps in the Goto Islands and elsewhere.

Unlike the other islands, the kankoro-mochi of Ojika Island is characterized by the use of ginger.This ginger syrup is made from ginger, which has a long history as part of their food culture.

It is also excellent with hot water, carbonated water, milk or milk tea.

Peanuts grown in the unique red soil are characterized by their deep richness and sweetness.

Actually, it is difficult to produce peanuts in red soil.

Instead, it is said that the soil is rich in minerals, which makes them grow sweet and richness.

Weeding under the scorching sun in summer, harvesting while watching the weather, and with the changing of the four seasons, we cultivate the peanuts with great care and diligence.

After harvesting, washing, and drying, peanuts are sorted one by one by hand and eye.

Due to the small size of the island, the cultivation area is limited and only 20 kg of peanuts can be roasted at a time in a special roasting machine, so mass production is not possible.

Once the peanuts are roasted, they are sorted again by hand and eye, and only those products that meet the standards are sold as “Ojika Island peanuts”.

The peanuts, the result of the labor and love of many people, are well known both on and off the island as a representative specialty of Ojika Island.
